TITLE: First-Line Supervisors/Managers of Food Preparation and Serving Workers
DEFINITION: Directly supervise and coordinate activities of food preparation and serving workers and their helpers. Manager/Supervisors are generally found in smaller establishments where they perform both supervisory and management functions, such as accounting, marketing, and personnel work, and may also engage in the same food preparation and serving work as the workers they supervise. Exclude work leaders who spend 20 percent or more of their time at tasks similar to those of employees under their supervision and include them in the occupations which are most closely related to their specific duties.
TASKS:
1. Supervises and coordinates activities of workers engaged in preparing and serving food and other related duties.
2. Observes and evaluates workers and work procedures to ensure quality standards and service.
3. Assigns duties, responsibilities, and work stations to employees, following work requirements.
4. Collaborates with specified personnel to plan menus, serving arrangements, and other related details.
5. Specifies food portions and courses, production and time sequences, and work station and equipment arrangements.
6. Inspects supplies, equipment, and work areas, to ensure efficient service and conformance to standards.
7. Trains workers in proper food preparation and service procedures.
8. Recommends measures to improve work procedures and worker performance to increase quality of services and job safety.
9. Records production and operational data on specified forms.
10. Purchases or requisitions supplies and equipment to ensure quality and timely delivery of services.
11. Resolves customer complaints regarding food service.
12. Initiates personnel actions, such as hires and discharges, to ensure proper staffing.
13. Receives, issues, and takes inventory of supplies and equipment, and reports shortages to designated personnel.
14. Analyzes operational problems, such as theft and wastage, and establishes controls.
15. Schedules parties and reservations, and greets and escorts guests to seating arrangements.
