TITLE: Dairy Processing Equipment Operators, Including Setters
DEFINITION: Set up, operate, or tend continuous flow or vat-type equipment to process milk, cream, or other dairy products, following specified methods and formulas.
TASKS:
1. Pumps or pours ingredients, such as salt, into product at specified intervals to make dairy products, such as buttermilk.
2. Starts pumps, agitators, and other equipment, adjusts temperature, and controls flow of product through system.
3. Connects pipes, fittings, valves, bowls, plates, disks, impeller shaft, and other parts to equipment with wrench.
4. Turns control knobs to adjust speed of operation or adds ingredients to ensure product meets specifications.
5. Starts pump to convey sterile solution through equipment and to admit measured amount of pasteurized cream into churn.
6. Observes and listens to equipment to detect possible malfunctions and reports malfunctions or product failing to meet specifications to supervisor.
7. Turns valves and observes gauges to regulate temperature and flow of water, refrigerant, and butter oil through chilling vat.
8. Pasteurizes and separates cream to obtain butter oil, using chilling vat following specified procedures.
9. Observes separation of buttermilk from butter and pumps buttermilk from churn.
10. When making cheese, dumps, presses, salts curds, and pierces, washes, and turns cheese blocks to cure cheese.
11. Adds water, alkali, and coloring to butter oil to achieve specified grade.
12. Opens churn and sprays butter with chlorinated water to remove residue buttermilk to produce butter following churn method.
13. Examines, tastes, and feels butter to detect undesirable flavors and to determine whether texture meets specifications, depending on product.
14. Tests butter or butter oil for moisture, salt content, acidity, and consistency, depending on product being produced, using testing apparatus.
15. Compares butter with color chart and adds coloring to meet specifications.
16. Records production and test data on record sheet.
